The 2006 GS that I purchased has an Autocom system on it. It looks like it was used wired for a while, then a Bluetooth Adapter was added. I did not receive any helmet headsets with the purchase, so I am looking for recommendations on what to purchase. As a minimum I plan to use it with a cell phone and an IPOD (hope to add a Zumo at some point in the future). Any recommendations?

Considering that the bulk of the system came with the bike you bought, I would recommend getting an Autocom headset and evaluate if the system will meet your needs. If for some reason you didn't like it, you'd only be out the cost of a headset (approx. $100). Autocom's are able to handle the devices you've listed.
The thing that I've learned about my Autocom that is worth passing on is the importance of getting the speakers mounted in the helmet correctly. If you don't feel comfortable installing them yourself just take you helmet to your local dealer and have them install them. A quick search on the web will find lots of people who had trouble with this. I'm not sure about bluetooth adapter(s) but the Zumo GPS's can connect to cellphones via bluetooth and then the phone can stay in your pocket and the Zumo becomes your phone interface.
