Default Pannier / Saddle Bag Options

I've been sniffing on Pannier/Saddle Bag options. Aluminum Side cases are EXPENSIVE and the plastic ones, IMHO, are ugly and wont hold up in a crash. Does anyone have any experience with the waterproof Wolfman bags? I know the "look" of a bag verses an aluminum Pannier is subjective but I was curious as to it's function. Does the exhaust melt the bag? Is it "Really" waterproof? What about bag security when your away from you bike? Is there excessive wind noise or straps flapping in the wind issues? Any thoughts would be appreciated.

I like the look of the GS without Panniers and these bags would only go on for an extended trip. Plus, they are MUCH cheaper than Aluminum Panniers.
