I sure hope it's not true.

Certainly the GS (at least the 2010 & up) doesn't want for power, and larger engines and water cooling both add more weight. Not good on a dual sport.

I have 5 bikes in my "stable" and none of them are water cooled....

A little bit of thread drift here but Toyota Scion branded sports
car FT/86/ FT/86II/ FTS is debuting at the New York Auto show
with the Subaru sourced water cooled boxer engine. The original
BMW boxer design was water cooled by Subaru and modified with
external timing belts which Toyota is replacing with internal timing
thereby returning to the original BMW R engine timing configuration.

How long the "R" will remain air cooled is a hot topic...only time
will tell. Most folks hope it is forever.

Air cooled dictates larger design tolerances to allow for expansion and
contraction which causes environmental issues during cold start,
warm up and drive off, which is apparently the reason for the exhaust
flapper valve of recent. The gossip is that the present design
will get by the eco folks at least till 2015.
