need tips on Ireland

I'm looking for roads/rides suggestions from some locals or someone who has ridden through Ireland. I've decided to visit the Isle of Man for a day at the TT races in June, but my route will go through Ireland first with 4 full days of riding.

Friday June 5: Mainz to Roscoff, France, & overnight ferry to Cork, Ireland

Saturday thru Tuesday: travel Ireland, destination Belfast for Tuesday ferry to Douglas, Isle of Man

Wed-Thursday: Isle of Man

Thursday evening: ferry to UK

Friday: make my way to London

Saturday: ferry from Dover to Calais, and back to Mainz Germany

This is tentative since there are dozens of ferry options, but the Ireland stay will be 4 days. Any ferry tips would also be welcome.....to and from Douglas trips seem to be quite expensive during that time period.
