In the 2018 GSA once the coding plug is installed the modes change from
RAIN ROAD DYNA PRO and ENDURO PRO
the Dyna and Enduro mode dont show up.

In my buddies 2016 GSA even with the coding plug installed the modes go from
RAIN ROAD DYNA ENDURO and ENDURO PRO

So my question is in the manual it says to use ENDURO PRO mode only with knobbies but ENDURO mode can be used with normal tires....which means once the plug is installed i loose the ENDURO mode....which is weird???? cos i dont have knobbies on my bike what do i do when Im offroad?

The changes you make in setup for DYNA PRO and ENDURO PRO (DTC, ABS, etc) with the plug installed persist after you power off. Good when you are on a trip and don't want to go back to Setup every time you power cycle. Without the plug, DYNA and ENDURO go back to stock settings with a power cycle. The owners manual has a semi-readable description of all this.

First of all you should compare apples with apples.
2016 and 2018 are different in regards to the riding modes!

What does somebody on a dirt bike do, when riding off road? Just ride, as they don't have riding modes.
But they do have the proper equipment for the environment they are in.

My suggestion is therefore very simple!
Put off road tyres on the bike, if you want to go off road.
Then worry about the ride modes and what to switch on and off.

For fire trails (dirt roads) you don't need Enduro Pro (or even Enduro for that matter)

Correct. I have a 2017 ( 1st gen) and there is no "Dyna Pro" option when the plug is installed. I have not yet tried to configure the Enduro Pro mode as I think I will never use it. I have switched it to regular Enduro mode when on dirt and it's worth it. Softens up the suspension a bit so washboard roads and whoops are smoother and the rear brake will lock up with no ABS while the front brake has minimal ABS intrusion ( or at least that's what it's supposed to do). Question is what am I missing out on with no Dyna Pro option?

I was not aware that you lose regular Dyna and Enduro on the latest Pro modes. I have a 2014 and it is as you say on the 2016. If you don't have knobbies on then I'm guessing your off road style isn't super aggressive and also guessing that maybe the Dyna Pro is more important to you and therefore you want to leave the plug installed? Marcimark is correct you don't have to have Enduro to go off road, particularly if you are not interested in sliding the rear end, so you could just switch to Road mode when on a fire road. And, I'm curious about KYJelly's comment that you can customize riding modes. That may be another option.

Yes so figured it out finally, I customized the ENDURO PRO mode to
ENGINE- ROAD (RAIN or ROAD or DYNA)
DTC- ENDURO ( ENDURO or ENDURO PRO)
ABS-ENDURO PRO (ENDURO or ENDURO PRO)

we ride in a terrain called LEH LADAKH, the terrain changes from road to gravel to dirt to rocks to river bed in a matter of miles.....
